Our Trip to Boston and New Hampshire

Here are a few pics from our trip we took to Boston and New England in October. Rev broke our camera half way through the trip and so it has taken us awhile to figure out how to get the pictures off the camera. All of our pics from New Hampshire and Maine were taken with my iphone so they are not that great of quality. We had a wonderful time, we absolutely loved Boston. It was a beautiful city. We had a blast traveling with the boys and have lots of funny stories and memories. Here are a few things that happened.
1. Calvin fell off the bed in the hotel room
2. Calvin fell out of the stroller
3. Rev spilled an entire starbucks mocha on himself in Faneuil Hall in Boston
4. Rev Lost his warm winter hat on the subway in Boston and was quite upset
5. Rev fell down the escalator in the airport in Boston
6. Calvin pooped in the bathtub twice in our hotel
7. Rev broke our camera at the Children's Museum in Boston
8.Calvin pooped on the carpet in our hotel
9. Calvin pooped on the white bedspread when we were staying at they Hyatt in Boston!!

We had a wonderful trip!

We went and took a tour of the USS constitution (Old Ironsides) and spent time at the museum. It was very neat. Rev really enjoyed seeing the big cannons on the ship and exploring all the different decks.
We took a the Cog Railway up to the top of Mount Washington, the highest peak in the North East. The 6,288-ft Mount Washington is "home of the world's worst weather". When we left the base it was about 50 degrees but when we arrived at the top it was 18 degrees. It is the oldest mountain climbing railroad, and the first ascent was made in 1869. The trains are run on biodiesel and travel at a whopping 4.8 miles an hour! It was a really neat experience.

Rev really enjoyed the snow. It was beautiful.
Calvin was able to see and touch snow for the first time!
After our trip up Mount Washington we decided to drive down the Kancamagus Scenic Byway. The scenic byway passes through the heart of the White Mountains in New Hampshire giving you a really spectacular view of the trees and various overlooks. We stopped about halfway and took a short hike down to a river to let the boys play and explore.

The White Mountains were absolutely beautiful. I would be more than happy to go back anytime!

Homemade Focaccia Bread

We made vegetable soup last night and tried a new focaccia bread recipe from this cookbook. The bread was very easy to make and very good. It calls for a lot of fresh herbs so we were able to pick from our herb spiral last night!!

Focaccia Bread
3 cups spelt flour
1 T baking powder
1 tsp baking soda
1 tsp sea salt
2 T fresh rosemary leaves chopped
1 T fresh basil leaves chopped
1 T fresh thyme leaves chopped
1 T fresh sage leaves chopped
1 1/2 cups "sour milk" (almond milk with 1 T apple cider vinegar)
1/2 cup applesauce
1/2 cup olive oil

preheat oven to 375. Oil 2 loaf pans set aside. Stir together flour, baking powder, baking soda, salt, and spices. Add the sour milk, applesauce and oil and stir well. Portion the batter into pans, sprinkle with a little more chopped rosemary on top. Bake for 35-40 min.

Storytelling Rocks

Rev and I have been making "storytelling rocks" this week. We went and found a bunch of nice smooth stones around town on Monday and then cut and glued little people, objects, scenes etc. on them. We now can make up lots of fun stories with our little rocks. We just used my fabric scraps and then painted a nice thin layer of modge podge over them.

Pumpkin Carving

Clay and Rev carved our pumpkin last week in our back yard. Rev was a bit hesitant about sticking his hand inside and pulling out all the insides. He had fun though!!

I forgot to post these pics of Clay and Rev carving our pumpkin!

Homemade Granola Making Day!

Rev and I spent some time this morning making lots of homemade granola. We put it in little bags and are taking it to friends and neighbors today. This is a great recipe and very easy to make. No need to ever buy boxed granola anymore!!!

Em and Rev's Granola
1 cup wheat germ with cinnamon and flaxseed (Hodgson Mill brand)
3 cups rolled oats
1 cup shredded unsweetened coconut
1/2 cup dry sunflower seeds
1/2 cup raw pumpkin seeds
1 cup walnuts
1 tsp cinnamon
1 tsp allspice
1/2 cup virgin coconut oil
3/4 cup honey
1 tsp vanilla
1/2 tsp salt
1 cup raisins, currants or any dried fruit of your choice

Preheat oven to 325. Combine dry ingredients in large bowl. In a seperate bowl combine oil, honey and vanilla. Pour over dry mixture and mix well. Pour on a rimmed baking sheet and bake for 20 minutes turning one or two times. Remove from oven and add raisins or dried fruit. Cool and store in baggie or air tight container.
