Almond Flour Gluten Free Brownies

Boys and I made these today and turned out wonderful!
Almond Flour Brownies

Ingredients(Makes 1 8 x 8 pan

3/4 cup almond flour
1/4 teaspoon salt
2 tablespoons unsweetened cocoa powder
1/2 teaspoon baking powder
1/2 cup sugar (we used sucanat)
3 large pastured eggs
1 teaspoon vanilla
1/2 cup raw butter
7oz semisweet or bittersweet baking chocolate, divided OR 3/4 cup chocolate chips

Preheat your oven to 350 degrees.Mix together the almond flour, salt, cocoa powder, and baking powder and set aside.In a small pan melt together 4 ounces of chocolate or a scant 1/2 cup chocolate chips with the butter. While the chocolate is melting, beat together the eggs, sugar, vanilla. Slowly pour the melted chocolate and butter into the egg/sugar mixture while whisking until fully incorporated. Don’t go too fast so that the raw eggs don’t cook upon contact.Pour the chocolate mixture in with the dry ingredients and mix completely.Pour the batter in an 8 x 8 pan.Sprinkle the top with the remaining chocolate and gently press it into the batter. Bake for 30 minutes or until a toothpick poked into the center comes out clean. Let these cool completely before cutting in.

Little Rozell Firefighters

Paleo Apple Cinnamon Coconut Flax Muffins


We invented this little muffin recipe today! Very yummy!

Apple Cinnamon Flax Muffins

2 cups almond flour

1/4 cup ground flax

1/4 cup organic shredded coconut

4 pastured eggs

1 organic apple finely chopped

1 very ripe banana

1/4 cup coconut oil

1/3 cup water

1 tsp baking soda

1 heaping tbsp cinnamon

1 T vanilla

Pre heat oven to 350. Mash banana in bottom of a mixing bowl. Using a hand held chopper if you have one, finely chop the apple, and add to the bowl. Add all other ingredients and mix by hand. The batter will not be super thick, but more like a cake batter. Using a bit more coconut oil, grease a muffin tin. Fill the tins about 3/4 of the way full. Bake for 15-17 minutes. Serve with raw butter or coconut oil on top!

Outdoor Kindergarten

I watched this beautiful video about an outdoor kindergarten in Norway last night. I was so inspired and encouraged to be out in Gods creation with our kiddos so much more than we already are. The thought and idea of being away from media, consumption, toys, noise, busyness etc on a daily basis sounds so wonderful. Be inspired by this little video.
